Instant Bread Uttapam


It’s the most frequently made food item in every GUJJU house-hold. Whether it’s for breakfast or even a tea-time snack. It’s simple yet appetizing and more over it will definitely bring a variation to your menu. So here it is INSTANT BREAD UTTAPAM.

INGREDIENTS:- Serves 3-4

1 1/2 cup Fine Sooji

6-7 slices white bread 

1 cup Yogurt

1 inch piece Ginger Grated

3-4 Green chillies finely chopped

(Remove seeds if you don’t want it spicy)

1/2 onion finely chopped 

1/2 tomato finely chopped

1/2 cup mixed peppers finely chopped 

1/2 cup  coriander chopped 

1 table spoon salt or as per taste 

1/2 table spoon Red chili powder

1 table spoon cumin powder

1 teaspoon ENO Fruit Salt

1 1/2 cup water (as required)

Step 1 Make Sooji Batter- In bowl add sooji, yogurt, ginger, green chillies, chili powder, cumin powder, salt. Mix everything well and gradually add water till batter is medium thick consistency (like a dosa batter). Mix well and taste test for salt and spice level. Once done add pinch of Eno fruit salt and set aside. You can add baking soda if you do not have ENO. If you don’t have either just set aside your batter for half hour.

Step 2 -Mix all veggies together.

Step 3- Take bread slice and remove the edges with a knife.

Step 4-  Start Heating a pan or a tava with 2 table spoons of oil on a medium flame. Meanwhile dip the bread slice in sooji batter and coat both sides. Slide it on the heated pan. Add chopped veggies and coriander on top and let it cook on a medium flame till it’s golden brown from bottom. Flip the uttapam and let it cook from other side as well. Gently apply pressure with a flat spatula so it’s nicely cooked from inside. Once both sides are cooked and golden brown you can remove from the pan. Let it cool down a bit and slice it half triangles or the way you like. Serve it mint- coriander chutney.

**If you do not have bread you can use this batter as make it as a regular uttapam as well. This batter quantity will easily make 6-7 bread uttapams***
